Vallée de la Marne, Champagne | France
David Levasseur began working at his family vineyards around Cuchery in the Vallée de la Marne in 1992 and officially took over the estate in 2003. He currently farms 4.2 hectares spread out over 18 parcels, farming sustainably with organic treatments and cover crops.
David brings a contemporary artist’s sensibility to a traditional craft, and the resulting Champagnes nicely bridge the gap between tradition and modernity, marked by a personal touch.
The Cellar
In the cellar, David strikes a balance between low-intervention and classic Champenoise methods. He ferments and ages in stainless steel and employs malolactic fermentation for certain cuvées.
